Cilantro-Lime Vinaigrette
(epicurious.com) This vinaigrette is quite nice blended together with an emulsion blender or other kitchen tool. It was delicious when tossed with a head of chopped salad greens, black beans, avocado chunks, corn, peppers and scallions.
2 Tbsp. fresh lime juice
1 garlic clove, minced
½ tsp. sugar
½ tsp. kosher salt
1/8 ground coriander
2 Tbsp. extra-virgin olive oil
1 Tbsp. chopped fresh cilantro
Stir, shake or blend all ingredients together.
Fresh Salsa
½ cup chopped onions
1 cup chopped tomatoes
½ cup chopped bell peppers
1-3 jalapenos finely chopped
2 Tablespoons vinegar or lime juice
1 teaspoon sugar
Pinch of salt
1 Tablespoon fresh cilantro
Mix everything together and enjoy with chips, beans and rice, etc.
Sesame Noodle Salad
8 oz soba noodles
2 T soy sauce
1-1/2 T toasted sesame oil
1 T vegetable oil
3 T lime juice
Dash cayenne
3 green onions, minced
3 T finely chopped fresh cilantro
3 T toasted sesame seeds
Vegetables – I sliced some radishes and lightly steamed some broccoli and pea pods. You could also chop some kohlrabi or turnips or carrots or later in the season, summer squash and cucumbers. Cook the noodles according to the package directions, drain, rinse with cold water and set aside. Meanwhile, prepare a dressing by whisking together the soy sauce, oils, lime juice, and cayenne. When the noodles are cool, toss with the dressing to coat. Stir in the green onions, vegetables, cilantro and sesame seeds.
